The top-five lime producing countries are India, Mexico, Argentina, Brazil and Spain. A staple of Mexican, Thai and Vietnamese cooking and typical of Persian, Iraqi and Indian cuisine, limes are used for both the acidity of the juice and floral aroma of the rind.
