The fruit of a low shrub or trailing vine, the cranberry favours acidic, boggy soil and cooler climates. Native Americans were the first to eat cranberries, so-called because the flower resembles the neck, head and bill of a crane. The USA and Canada are now the main cranberry producers.
Famed for their acidic, sweet flavour and pretty colour, cranberries are harvested in late Autumn. They have become a festive flavour associated with Thanksgiving and Christmas , when cranberry sauce is traditionally eaten as an accompaniment to roast turkey.
